The balsamic vinegar of Modena - Red Line is the standard quality product, aged for at least 2 months in oak barrels. It has a fairly bitter taste. Ideal for lovers of stronger flavours. Perfect over crudités, salads and in a "pinzimonio" dressing.
It can be heated to concentrate it and make the flavour less bitter
The product is obtained through a special process where concentrated and/or boiled Grape must, Vinegar aged to at least 10 years, and Wine Vinegar are mixed as traditional calls for. The product is then matured in Slavonic oak barrels for a period lasting a minimum of 2 months or up to 3 years or more.
Modena, the carefully selected raw materials, the maturation period in wood are the fundamental requisites needed to ensure that the resultant product is unique and matchless.

Utilisation of Concentrated grape must obtained from the following vine varieties: Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni.
All aging in wooden barrels for a minimum of 2 months and up to 3 years or more.
Product analysis as per control plan set by PGI.
